I think you mean rpcinfo -p, but anyway. Does nfsd stay running, or
does the process die? Not sure if this matters, but is nfs defined in
/etc/services? Was this host hardened?

What you could try is manually running portmap -dv, see if you can get
any debug output when you start nfsd.
